Our Kitchen

Our kitchen is rooted in Québec's seasons, guided by a respect for local producers and a love for honest, flavourful cooking. We work with small farms and artisans across Québec to source the freshest ingredients, and our menu changes with the seasons, reflecting what the land and water offer.

Techniques blend classic French training with contemporary Canadian creativity. The result is food that feels both familiar and quietly original, served without pretence but with real care.

Led by a team of passionate chefs, our kitchen is a place where craft and creativity meet. Our chefs bring experience from Montréal's top restaurants and a deep connection to Québec's culinary heritage, working closely with front-of-house to ensure every dish tells a story.

Seafood is sourced from sustainable fisheries along the St. Lawrence, bringing the river's freshness to the table.

From the Grill

Our grill is the heart of the kitchen, where prime cuts and fresh seafood meet the flame. We use a combination of charcoal and wood for a distinct smoky flavour, and steaks are dry-aged in-house and cooked to perfection.

Grilled vegetables and seafood offer lighter options, while the fire brings depth and a gentle char to everything it touches. It is cooking that rewards patience and attention.

For the Table

Designed for sharing, our table plates bring people together over generous, flavourful dishes.

  • Charcuterie Board Québec cheeses, cured meats, and preserves.
  • Roasted Bone Marrow Parsley salad and grilled bread.
  • Whole Roasted Fish Herbs and lemon.
  • Seasonal Vegetable Platter Dips and garden herbs.

Desserts

Our desserts are a celebration of Québec's sweet traditions, from maple to wild berries. The signature maple sugar pie with crème fraîche is a quiet favourite, while the dark chocolate and cherry torte offers something richer.

Apple tarte tatin with Calvados caramel and seasonal sorbets and ice creams round out the menu, letting the meal end as gently as the evening begins.
